Friends and family close to me always comment on how busy I am, sometimes with annoyance but usually with a kind of “how do you do it?” tone. The truth is I think I have some kind of disorder, where I have complete fear of being bored. I HATE the feeling I get when I have an open window of time with nothing planned (strange I know) I just keep thinking about how if I had planned my schedule better I could be doing something fun/interesting/purposeful right now. This said, I do enjoy some down time at home but even then I still plan out my day by the hour. Take the other day for example, I randomly had a whole day unplanned…you can imagine my anxiety. So I sat down and made up a list of things to do:
1. Decorate for Halloween- Now I didn’t feel like leaving the house and shopping especially because we are trying to penny pinch as we save up for our new house. So I rummaged in the garage and around the house and came up with all the supplies needed to make this (minus the candy):
2. Bake- I hate to bake, so you know I am really bored when I start baking. After finding I had all the things I needed on hand to do the Halloween decor I decided to take things a step further and see what I could make out of the stuff in my cupboards. I found graham crackers that I think I have had for at least a year (eww, but they were sealed so I figured they were good), so I made a graham cracker crust. Then I found I had sour cream, cream cheese, cream and eggs. Thanks to the trusty internet I found a cheesecake recipe that would work with what I had in the fridge. To my total astonishment it came out amazing!! I even took some frozen berries and bourbon and reduced it to make a yummy berry topping.
3. Cook- Often times on Sundays I try and cook a few things for the week, stuff I can heat up quickly for dinner or take to work for lunches. I was planning on making creamy chicken enchiladas and when I was at TJ’s found that I could buy a whole chicken for $6 or 2 boneless chicken breasts for $9. So I bought the whole bird and roasted it in the oven. I stuffed it with lemons, onion, and rosemary and gave it rub down with butter and salt & pepper. My house smelled amazing and I was able to not only make the enchiladas but also some chicken noodle soup with homemade stock.
4. Relax- You see the only way I actually relax on a day like this is if I schedule it. So I forced myself to sit on the couch while my chicken was baking and watch an episode of Big Love.
So this was a peek into my psychosis, and yes I know I need to learn to CHILL OUT a bit more. But this post is a perfect example, look at all the cool crap I got done because I didn’t let myself get bored.

You are one of a kind! Dang, in comparison I think I am pretty lazy. You go domestic goddess!
