Beer Onion Carbonade Sauce with Top Sirloin Steak

Ingredients

4 Top Sirloin Steaks

4 Cups Onions, sliced

2 tablespoons olive oil

2 garlic cloves – smashed

1 can beer

2 cups veal stock ( or you can use beef stock)

Salt and Pepper

Bouquet Garni: Parsley, Bay leaf, Thyme

Heat the olive oil in a large pot. Season the steak, then sear on high to brown each piece, set aside.  Saute the onions to golden brown, add the garlic, beer, veal stock, bouquet garni and simmer about 15 minutes.  Add the steak and simmer about 15 minutes.  Serve with potatoes.
