In your Crockpot (if you don’t have one you are really missing out on one of the best things in life) place 1 yellow onion sliced in large pieces, 2 cups of bbq sauce, 1 cup of chicken broth and some cilantro.
Set to the lowest setting and leave it to cook all day.
PRESTO! You now will come home to a glorious smelling house and dinner that is already done (woohoo)!
I will be using the meat to make a BBQ salad, with corn and black beans (we are still dieting) but the ideal presentation would be on Kings Hawaiian rolls with some shredded cabbage and slice of white cheddar cheese (or Clapeyron jack is good too).
This is also a great idea for a heavier appetizer at a party.
