Every now and again I throw caution to the wind and make something so delightfully bad for me that it usually involves not being able to button my pants for a solid week afterwards and this my friends is one of those recipes. Here is what we are going to do:
Go to the store and get these items.
Now take your chicken and coat with salt and pepper and dip into some flour. Get some olive oil hot and pop the chicken in, like so:
Cook until the chicken looks like this:
Now time to de glaze the pan with some white wine, don’t forget to sample the goods (wink )
Squeeze half a lemon and chop some shallots and add to your white wine.
Now take your partially cooked golden pan fried chicken and make an incision in the middle of the breast so you can stuff it with the feta cheese.
Now we are going to wrap the stuffed chicken in proscuitto and place in an oven safe dish, baking at 350 for about 15 minutes.
While the chicken cooks we make the sauce, remember we have had our shallots simmering in some white wine, lemon juice and all the yummy chicken drippings so we will just add some cream and a scoop of pesto and whisk (sorry the picture does not do the deliciousness of this sauce justice).
Now we are going to take the other half of our lemon, olive oil and some salt and pepper and wilt some spinach in an effort to make this remotely healthy.
A few steps ago I forgot to mention to cook the pasta, so do that and then top with the spinach.
Ding! Our chicken is done! Place on top of the spinach.
Just when you thought it couldn’t get any better…we add the sauce and a sprinkling of parmesan cheese.
Now for the taste test…I think he liked it!
