My mother in law and I decided it would be fun to do Mexican food for our family Christmas dinner this year. She is going to bug the neighbors for some of their tamales, others will bring the chips & dips, mexican salad, rice and I will be bringing Carnitas Enchiladas (which I have never made before, yikes!). Luckily my Mom agreed to let me make this for a holiday dinner tonight at her house so I can perfect it before taking it to the Smiths. This is a semi-homemade type recipe mainly because I am obsessed with the Carnitas from Chipotle and I wanted to build a dish around them. Here is the recipe I will use:
Carnitas from Chipotle
3 bottles of TJ’s enchilada sauce
1 cup Cilantro chopped
2 yellow onions diced
1 cup of diced Scallions
2 bags of shredded cheese
corn tortillas
In a large bowl mix the cold carnitas with cheese and both green and yellow onions. Stuff corn tortillas with mixture and set in a dish (tip heat the tortillas in the microwave to make them easier to work with). Pour a hefty layer of sauce over them and smother with cheese. Sprinkle the cilantro on the top saving half to put on once it is out of the oven. Bon Appetite!
