In honor of Sol’s b-day I am posting my ridiculously bad for you mac n’ cheese recipe so his lovely wifey can make it for him for his b-day dinner.
1 bag of elbow noodles, boil, strain, put pasta in a greased 13×9 baking dish.
Rue: olive oil, one turn of the pan add chopped onion and simmer, then add 6 tbsp of butter, 6 tsp flour, 2.5 cups of milk, salt and pepper. Whisk constantly.
Cheese Sauce: Once the rue is hot start adding handfuls of shredded cheese I use a cheddar jack blend. Tip Spray olive oil on your whisk to avoid the cheese sticking as you stir it in. The sauce is done when the cheese is melted. Pour sauce over pasta. Top with more shredded cheese. Cover with Italian seasoned bread crumbs. Take a piece of foil and spray one side so the cheese does not stick to the foil and cover the baking dish.
Bake 1 hour at 350, take foil off the last 15 min.

i made this for my friend barb’s birthday and the volunteers at the hb ranch today and it was a huge hit. i made a double batch and put in the crock pot to keep hot for the trip which worked great. i winged it on the quantity of cheese and made sure my sauce was plenty wet due to putting in the pot for several hours but now i have been asked for the recipe and there’s no quantity of cheese to pass on. if you could please be more specific on that it would be terrifically helpful. thanks da’ling
Oh great! Well the thing of it is I never really measure so I don’t think I can really help. The way I think about cheese for the cheese sauce is like a spice you can add more or less depending on how you like it to taste. So I always start with like 3 heaping handfuls and then add more and more if the sauce needs to taste cheesier. Hope that helps.
