Balsamic Dijon Pork Chops

I used to make a recipe similar to this, and tonight I am trying a variation:

Pork hops (2 chops)
Black pepper, freshly ground – 1 tbsp
Balsamic Vinegar – 6 tbsp
Dijon Mustard – 4tsp
Olive Oil – 1 tbsp

Smother your chops in dijon, and brown in a skillet with the olive oil for about 8 min. on each side.  Set aside when done, then whisk 1/4 cup water with the balsamic and reduce in the skillet.  Pour the sauce over your chops and serve with a rosemary garnish.
